I have never been a pepper fan, but I make an exception for red bell peppers. Chopped up in a veggie saute, they add a great flavor and bright color. I buy mine fresh, chop them up and add them to a pan with some oil and whatever other veggies I'm making (onions, corn, and various types of beans go great with them). I serve it over brown rice, but my boyfriend eats meat so I will frequently top the veggies with slices of grilled chicken, for him. Great pick for food of the week!
