One of my most recent additions to my diet are roasted red peppers. For the first 30 years of my life, I had missed out on this delicious food. You can find it in jars at the supermarket, but it doesn’t get a lot of shelf space, so it’s easy to miss. It has a little more sodium than I would hope. However at 10 calories per serving, it packs a ton of great taste that won’t show up around your waist.
I’ve found that when added to steak and cheese in a low carb, high fiber tortilla, it can make for a tasty meal. They really go well with any kind of sandwich. Next time you find yourself reaching for mayonnaise, think about adding some roasted red peppers instead.

I have never been a pepper fan, but I make an exception for red bell peppers. Chopped up in a veggie saute, they add a great flavor and bright color. I buy mine fresh, chop them up and add them to a pan with some oil and whatever other veggies I’m making (onions, corn, and various types of beans go great with them). I serve it over brown rice, but my boyfriend eats meat so I will frequently top the veggies with slices of grilled chicken, for him. Great pick for food of the week!
